Hello garden gals and guys! Happy August! I cannot believe how quickly the summer is passing.
My tomatoes are finally ripening and I’m enjoying every one of them. Nothing puts a smile on my face quicker than a vine-ripened tomato. Here I am with two Brandywine tomatoes I picked this morning:
Here are all the maters I harvested over the past two days:
An absolute favorite dish of mine is caprese.
What’s that? You’ve never had it?? *gasp* Caprese is an Italian dish. You slice up a nice garden fresh tomato, place fresh mozzarella slices on top of it, then add some fresh basil (chopped). I top mine with a little olive oil, balsamic vinegar, salt and pepper. Here’s a batch I made today:
It tastes just as delicious as it looks. My mom saw my tomato garden today and said “those are tomato trees!” I have to admit, she’s right. Here is my forest:
I’m also growing eggplant for my mom. She was talking to all of her eggplants today and saying she couldn’t wait for them to come home with her. LOL The eggplant and the marigolds are getting HUGE. In case you don’t remember, here is a shot of what it looked like when I first planted it:

I know. Whoa. Here are shots of some of the eggplants:
I counted about 15 eggplants across the two plants (and there are probably more than that!). They are looking good! I’m not a huge fan of eggplant, but my mom is so I grow them for her. But they are so pretty to look at.
Getting back to those maters…here is a little batch of salsa I whipped up using my maters and jalapenos (I had to buy the green and red onions because I didn’t grow any this year).
I don’t eat tortilla chips because I’m doing the keto lifestyle. But I did make some delicious chips out of cheddar cheese.
I put a little salsa on each cheese chip (they were more like the size of cookies), folded them and ate away. It was sooooo good.
