Happy July! Yesterday was the last day of June and I got a small harvest out of my garden that consisted of several sweet banana peppers and two more okra.
Now here’s the real treat. Last week, I took all my beans that I harvested and made string beans with lemon zest. This is a recipe that I got from the show Down Home with the Neely’s. It’s very simple.
Lemon Zest String Beans
Ingredients:
2 lbs. string beans (cleaned and ends chopped off)
one lemon
1 tsp. crushed red pepper flakes
two cloves of garlic (chopped)
2 tbsp. olive oil
3 tbsp. butter
Boil water with a pinch of salt. Take two pounds of string beans and add to boiling water. Cook for one and a half minutes. Drain and rinse with cold water to stop the cooking process.
In a frying pan heat the olive oil and butter. Add the chopped garlic and red pepper flakes and saute over medium flame. Add your string beans and stir with tongs for about two or three minutes.
Remove from frying pan and add the zest of one lemon. Serve!

I then added this to my dinner plate of ribs and macaroni and cheese…YUMMY!

i havea terrific recipe for short ribs that has a piece of dark chocolate added to the gravy at the very end of the cooking process this will be perfect as the vegetable dish. thanks
Audra, I am living vicariously through your garden this year. My Aunt was very sick and passed away in June and my best laid plans of this year's garden didn't happen. So keep those recipes and harvests coming. Love to hear about them. Believe it or not they finally put curbs on Madison Avenue and paved the street. They took out most of our beautiful old trees though. I took on the township to get them to put in new ones throughout the President's streets and won! God Bless you. Cindy
